PUT IN MIXING BOWL:
1 and 1/2 c. flour

MIX TOGETHER IN A GLASS CUP:
2 eggs
1 tbsp. water
1 tbsp. oil

MAKE A *WELL* IN THE FLOUR AND ADD THE ABOVE MIXTURE. MIX THE DOUGH TOGETHER WITH A FORK

KNEAD AS SMOOTH AS POSSIBLE ON A CLEAN COUNTERTOP. CUT THE DOUGH IN HALF AND COVER HALF OF THE DOUGH WITH A DAMP CLOTH SO IT DOESN’T DRY OUT.

USING A PASTA MACHINE PUT HALF THE DOUGH THROUGH THE ROLLERS TO GET A THIN, SMOOTH DOUGH. START AT # 1 SETTING AND ROLL THROUGH. FOLD AND PUT THROUGH AGAIN. AFTER DOING THIS 1 OR 2 TIMES GO TO THE # 2 SETTING AND PUT THE DOUGH THROUGH. DO NOT FOLD ANYMORE. WORK UP TO # 6. PUT DOUGH THROUGH THE NOODLE CUTTER AND HANG UP THE FINISHED NOODLES TO DRY.

COOK THE NOODLES BEFORE ADDING TO SOUP. BOIL WATER IN A LARGE POT. PUT NOODLES IN AND KEEP THE WATER BOILING AND UNCOVERED FOR 6 TO 12 MIN. DEPENDING ON THE THICKNESS OF THE NOODLES.
