Preheat oven to 350°

Grease 2 cookie sheets.

WISK TOGETHER (in medium bowl):
1 c. rolled oats, ground in food processor or blender until very fine
1 c. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

BEAT UNTIL LIGHT & FLUFFY (w/ hand or electric mixer in large bowl, electric on med. for 3 min.):

8 tbsp. (1 stick) unsalted butter, softened but still firm
1/2 c. packed light or dark brown sugar
1/2 c. granulated sugar

ADD (beat until combined, about 20 sec.):
1 large egg
1/2 tsp. vanilla extract

ADD DRY INGREDIENTS THAT YOU WHISKED TOGETHER EARLIER. BEAT UNTIL COMBINED, ABOUT 30 TO 45 SEC.

ADD:
6 oz. semisweet chocolate chips
1/2 c. sweetened dried coconut (optional)
2 oz. semi or bittersweet chocolate, chopped (optional)
1/4 c. walnuts or pecans, chopped (optional)

WORKING WITH 2 TABLESPOONS OF DOUGH AT A TIME, FORM DOUGH INTO BALLS ABOUT 1 AND 3/4 INCHES THICK.

PLACE BALLS 2 INCHES APART ON THE COOKIE SHEET.

BAKE REVERSING POSITION OF COOKIE SHEET HALFWAY THROUGH BAKING.

BAKE 15 TO 18 MIN., UNTIL EDGES ARE CRISP BUT CENTERS STILL SOFT.

COOL COOKIES FOR ABOUT 1 TO 2 MIN. ON SHEET BEFORE REMOVING.
