2-1/2 cups apples, peeled & diced
1-1/2 cups self-rising flour
1 stick butter, melted
1 cup sour cream
1/2 tsp sugar
1/2 tsp salt
1/2 tsp pepper
1 tbsp brown sugar
1/2 tsp curry powder
3/4 cups cheddar cheese, shredded
8 slices bacon, cooked & crumbled

Directions:
Directions:
Mix together brown sugar, curry, cheese, and bacon. Add apples and stir well. In another bowl, mix flour, butter, and sour cream into a batter. Combine the two mixtures. Drop 1-2 tsp batter into an ungreased mini muffin tin. Bake at 400 for 12-15 mins.
