3-4 chicken breasts, seasoned, cooked and shredded
1 medium onion
1 can green chiles, drained
1 block cream cheese
2 c. Monterey Jack cheese
8 oz. whipping cream or white cheese dip

Directions:
Directions:
Saute onion in oil 4-5 minutes, add green chiles and continue to saute for another minute. Add the shredded chicken, a small handful of the Monterey Jack cheese, and cream cheese and cook over medium heat until combined.
Spoon the mixture into tortillas, wrap and place in a greased pan. It should make 6-8 enchiladas. Pour whipping cream or Queso dip over enchiladas and cover with the remainder of the Monterey Jack cheese. Bake at 375 until cheese is melted, about 30 minutes.
Serve with Frito scoops.
