3 tbsp cooking oil
2 eggs
8 green onions
2 C chopped ham
1 1/2 C chopped carrots
1 1/2 C peas (I like the frozen green peas)
5 C cooked rice (day old, cold rice works best)
5 tbsp soy sauce (or more depending on taste)

Directions:
Heat 1 tbsp oil in frying pan. Fry and stir 2 eggs. Remove egg from pan and add 2 more tbsp of oil. Cook green onions in oil. Add Ham, carrots, and peas and cook until lightly brown. (this brings out the flavor) Add rice and soy sauce and cook for about 10 more minutes. (making sure to stir the whole time)
