2 1/2 c sugar
1/2 c. water
1 tsp. vanilla
1/2 c. light corn syrup
2 egg whites
1/2 c chopped nuts (optional)

Directions:
Directions:
In a 2 quart saucepan, combine sugar, syrup, and water. Cook to soft ball stage (236), stirring only until sugar dissolves. Beat egg whites until stiff peaks form. When syrup mixture reaches 236, gradually add half the syrup mixture to egg whites, beating at high speed on electric mixture. Cook remaining syrup mixture to hard ball stage (250) and slowly add to egg whites, beating constantly. Add vanilla and continue to beat until candy holds its shape about 5 minutes. Add chopped nuts, if desired, and drop candy by teaspoon on waxed paper. Makes approximately 40 pieces.
