2 large Zucchini
3 large onions
1 bunch Parsley minced
2 cups fresh mint minced
1/2 lb parmesan grated or shredded
2 Tsb dried mint
1/4 cup olive oil
4 C Unbleached flour

bake at 350 1 1/2 hours to 2 hours
wash zucchini cut off stems and bottoms, slice lengthwise into thin strips season with salt and set aside to drain 1 hour.
place onions, mint, and cheeses in separate bowl. dredge zucchini slices in flour. layer slices in greased 9 x 13 pan. sprinkle w onion cheese and herbs. layer until zucchini slices and herb and cheese mixture are used. sprinkle top layer generously with parmesan cheese and dry mint.
after baked - sprinkle with olive oil and cut into squares.
