2 sweet potatoes, peeled and chopped
4 new potatoes, chopped
4 small Yukon Gold potatoes, chopped
1/3 c olive oil
3/4 tsp dried tarragon
1/2 tsp salt
1/4 tsp black pepper

Directions:
Directions:
Preheat oven to 425. Spray a baking sheet with nonstick cooking spray. Cook potatoes in boiling salted water for 3 minutes. Drain. Spread potatoes on a single layer on the prepared sheet. Drizzle with olive oil. Sprinkle with tarragon, salt and pepper. Roast until browned and crisp, about 15 minutes. Note - I don't use the tarragon I just use salt and pepper or whatever spice I feel like using.
