4 boneless, chicken breast halves
1/4 c flour
1/4 c canola oil
1 large onion, sliced
2 medium green bell peppers cut into strips
1 (16-ounce) can sliced peaches
3 tbsp rice-wine vinegar
1 tbsp cornstarch
1 tbsp soy sauce
1 c cherry tomato halves
Hot cooked rice

Directions:

Coat chicken with flour. Heat canola oil in a large skillet over medium-high heat. Cook chicken in hot oil, turning occasionally until cooked through, about 10 minutes. Transfer chicken to a platter, reserving skillet drippings.
Saute onion and bell peppers in reserved skillet drippings, stirring continually until crisp-tender about 6 minutes. Remove to a bowl using slotted spoon, reserving skittle drippings. Return chicken to skillet.
Drain peaches, reserving peaches and syrup. Mix reserved syrup, vinegar, cornstarch and soy sauce in a small bowl and pour over chicken. Cook syrup mixtures until thickened about 2 minuets. Add onion mixtures, reserved peaches and tomatoes to skillet and mix gently. Cook, stirring occasional, just until heated through about 5 minutes. Serve over hot rice.
