1c. sifted cake flour
1 1/2c. sugar
1 1/4c (10-12) egg whites
1/4tsp. salt
1/4tsp. almond extract
1tsp. vanilla
1 1/4tsp. cream of tartar

Directions:
Directions:
Sift flour once, add 1/2 cup of sugar and sift together four times. Beat egg whites and salt. When foamy add cream of tartar and continue beating until eggs are stiff enough to hold peaks, but not dry. Add remaining sugar, 2 tablespoons at a time, beating well after each addition until sugar is just blended. Add flavorings. Sift the flour, about 1/4 cup at a time over the mixture. Fold in lightly, repeat until all is used up. Turn into a 10 inch angel food tin. Cut gently through batter to remove any bubbles. Bake in a 375 oven for 30-35 minutes. Remove from oven and invert pan one hour or until cake is cooled.
