1 lb. kidney beans (dry)
1 large onion
2 cloves garlic
salt and pepper to taste
1 teaspoon thyme
1 bay leaf
celery to taste (chopped celery leaves are better)
parsley (optional)
smoked sausage or ham (I use deer sausage most of the time)

Directions:
Directions:
Soak beans overnight. I cook my sausage some before I put them in the crock pot. Combine all ingredients, add water to cover ingredients and cook in crock pot for 4 hours on high or 6 hours until done on low.

Serve over rice, with slaw or salad
