4 yams or sweet potatoes, unpeeled
1 t. salt
1/2 c. butter or margarine
1/2 c. packed br. sugar
1 T. orange peel
1/4 c. orange juice
1/8 t. cinnamon
Dash pepper

Directions:
Directions:
Preheat Oven to 375. Butter 1 quart casserole
In 4 qt. saucepan, place yams and salt. Add water to cover. Heat to boiling over high heat. Reduce heat to low. Cover. Simmer 30-40 minutes until yams are fork-tender. Drain. Cool slightly. Peel and quarter yams.
In large bowl with mixer at low speed, beat potatoes and remaining ingredients until light and fluffy. Spread potato mixture into prepared casserole.
Bake for 15 minutes or until bubbly.

If desired, you may top with 2 cups of miniature marshmallows prior to baking. Casserole is done when marshmallows are golden.
