1 1/2 lbs beef stew meat (elk meat is yummy too)
1 small bell pepper, chopped (1/2 c)
3/4 c 1 inch pieces fresh or frozen green beans
3/4 c chopped onion
3/4 c sliced carrots
2/3 c fresh or frozen whole kernel corn
2 medium unpeeled potatoes cut into 1 inch pieces (about 2 c)
1 1/2 c water
1 tsp salt
1 tsp fresh thyme (1/2 tsp dried)
1/4 tsp pepper
3 1/2 cups beef broth (or 2- 14 oz cans)
2 cans (14 1/2 oz each) diced tomatoes, undrained
1 can (8 oz) tomato sauce

Mix all ingredients in a 6 quart crock pot. Cover and cook on low for 8 to 9 hours or high for 4 to 5 hours until vegetables are tender.
