Basic Sauce

1 lb. (3 to 4 medium) fresh California tomatoes, coarsely chopped
1 Tbsp. olive oil
3/4 tsp. each salt and sugar
1/2 tsp. ground pepper
1 1/2 to 2 tsp. balsamic vinegar

Directions:
Directions:
In a food processor or blender, combine and process all ingredients to make rough-textured sauce. Adjust flavors to taste. Makes about 1 1/2 cups sauce.

I make this in the summer with my home grown tomatoes and freeze it to have the summer tomato taste in dishes all year long. The sauce is watery, so plan on simmering dishes using the sauce for a longer time. The flavor is well worth the extra time.
