1 10-ounce package frozen chopped spinach(thawed and squeezed dry)
3 eggs beaten
8 ounces feta cheese, crumbled
3 tbsp.whole- wheat flour
1/2 tsp.salt (optional)
1/4 tsp.grated nutmeg
4 ounces grated Parmesan cheese

Directions:

Preheat the oven to 350
Grease an 8x8 baking pan or use nonstick cooking spray.
Mix together spinach,eggs,feta,flour,salt and nutmeg in a large bowl. Pour this mixture into the baking pan.
Sprinkle the Parmesan cheese over the top and bake 25 to 30 minutes, until the top is golden brown and bubbly and a knife stuck in the middle comes out clean.
Remove from oven and let cool at least 10 minutes before slicing. Serve hot or room temperature.
