6 lasagna noodles
lb ground beef
1/4c each chopped onion, green pepper, fresh mushrooms
14 oz meatless spaghetti sauce

1 egg beaten
c. cottage cheese
2 T Parmesan cheese
1 c shredded mozzarella cheese
1 tsp. Italian seasoning

Cook noodles according to package directions, then drain. In a large skillet cook the beef, onion, green pepper and mushrooms over medium heat till meat is no longer pink. Drain. Stir in sauce and cook over low heat for 5minutes,stirring occasionally. In small bowl, combine egg, cottage cheese, parmesan cheese and seasoning.
Spread 1/4c meat sauce in greased 9x4x2 loaf pan
Trim noodles to fit pan.
Place 2 noodles over the sauce, layer w/1/3 of cheese mixture,1/3 of remaining sauce and 1/3c mozzarella cheese.
Repeat layers twice and use noodle trimmings in top layer.
Bake uncovered at 350 for 30-35 minutes. Let stand between 5-10 minutes before cutting
