3 eggs, beaten
1 c. cooking oil
2 c.sugar
2 c. grated zucchini
2 tsp. vanilla
3 c. flour
1 tsp. soda
1/2 tsp. baking powder
1 tsp. cinnamon
1/2 c. chopped nuts

Directions:
Directions:
Pre heat oven to 350. Grease and flour 2 loaf pans. Beat eggs, add oil, sugar, grated zucchini and vanilla. Cream together. Sift and measure 3 cups flour. Then sift together flour, soda, baking powder, salt and cinnamon. Add dry ingredients to creamed mixture and mix well. Add chopped nuts. Bake at 350 for 1 hour.
