1 10 oz. pkg. frozen chopped spinach
2 13 cans artichoke hearts
cup mayonnaise
cup sour cream
1 cup freshly grated parmesan
1 cup grated pepper jack cheese
(swiss cheese is good, too, in place of jack cheese)

Directions:
Directions:
Preheat oven to 350. Heat the spinach in a microwave on high for 5 minutes and squeeze dry. Drain the artichoke and coarsely chop in a food processor. Combine all the ingredients except the jack cheese in a large bowl. Stir well. Scrape into the prepared casserole dish and sprinkle with jack cheese. Bake for 30 minutes.

Transfer to chafing dish and keep warm. Serve with bagel chips.

I half this recipe and freeze for later.
