6 c. zucchini or summer squash (I like to use both)
1/4 c. sliced onion
1 can cream of mushroom soup
1 carrot, grated
1 c. sour cream
1 pkg. Stove Top stuffing mix or other brand
1 stick margarine

Directions:
Directions:
Boil squash, onion and carrot together for 5 minutes. Drain well. Combine soup and sour cream. Melt margarine and add to stuffing. Put 1/2 stuffing mix in a 9x13 casserole. Mix the squash into the cream mixture. Spread over stuffing. Sprinkle remaining crumbs on top. Bake at 350 for 20 minutes.
