6 medium white potatoes 2 c. shredded cheddar cheese 6 T. butter, divided 2 c. sour cream 1/3 c. chopped onion 1 tsp. salt 1/4 tsp. pepper
Boil potatoes in skins. Chill, peel and shred. Stir in cheese and 4 T. melted butter. Fold in sour cream, onion, salt and pepper. Place in greased casserole and dot with remaining butter. Bake at 350º for 30 minutes.
