1 head Escarole
1 can Green Giant Butter Beans
Salt if desired
1 T. Olive oil

Directions:
Directions:
Wash escarole and cut into pieces. Boil water. Add escarole to boiled water. When cooked, drain some water, and add can of beans plus 1 T. olive oil. Season and serve.

Variation: Use 1 qt. or more chicken broth instead of water and canellini beans instead of the butter beans.
