2 pounds beef round, tenderloin or sirloin
4 to 8 tablespoons butter, melted
1 cup onion, chopped
1clove garlic, finely chopped
1/2 pound fresh mushrooms, chopped
2 to 3 tablespoons flour
1-1/2 to 2 teaspoons meat extract paste or dry mustard
1 to 2 tablespoons catsup
1/2 teaspoon salt
1/8 teaspoon pepper
1 can beef bouillon, undiluted
1/4 to 1/2 cup dry white wine
1 tablespoon fresh dill snipped or 1/4 tsp. dried dill
1-1/2 cup sour cream
4 cup cooked white rice
1/2 cup cooked wild rice
fresh parsley

Cut beef in strips; brown in 1 tablespoon butter in heavy skillet. Remove beef; add remaining butter to skillet. Saute onion, garlic, and mushrooms about 5 minutes. Remove from heat; stir in flour, meat extract paste, catsup, salt and pepper. Gradually add bouillon; bring to a boil, stirring constantly. Reduce heat; simmer 5 minutes. Blend in wine, dill and sour cream. Add beef, simmer until hot. Toss rice together. Surround stroganoff with rice; sprinkle with parsley. If mustard is substituted for the meat extract, omit the dill.
