Spinach and Pesto Salmon Recipe

1 puff pastry sheet,
fresh baby spinach,
salmon fillet (large)

For sauce:

Preheat oven to 350 degrees.
Roll puff pastry sheet until it is large enough to wrap entire salmon fillet.
Lay a thick bed of spinach on center area of pastry sheet.
Place salmon fillet onto spinach.
Rub a layer of pesto on top of salmon (1/2" to 1" thick).
Fold pastry sheet over, using a little water to help seal the pastry seam.
Bake in oven for 45 minutes, then check. Dish is ready when pastry is golden brown. (May take up to 90 minutes.)

While salmon is baking:
Grate carrots, cover with honey and heat on medium-low stove top.
Takes 20-25 minutes.

To serve:
Slice salmon pouch into portions, and top with honey carrot sauce.บบบ
