2 - 4 lbs. boiled, peeled, and deveined shrimp
1/2 lb. diced hot sausage or ham
2 tbsp. shortening
1/2 cup green onions and tops
1 cup diced green pepper
3 cloves garlic, chopped
1/4 cup chopped parsley (optional)
2 cups canned tomatoes
1/2 tsp. salt
1/3 tsp. cayenne pepper
1 tsp. crushed thyme
1 bay leaf

Directions:
Directions:
Drain and rinse shrimp. Saute sausage or ham in shortening for 3 minutes. Add onions, pepper, garlic and cook till tender. Add remaining ingredients, including shrimp. Bring to a boil and reduce heat. Cook at low temp. (preferable in oven) with closed cover for about 35 to 45 minutes. Recipe calls for 1 cup uncooked rice to be included with other ingredients, but I always cook rice separately.

This is another one of my Dad's original recipes, that is delicious. Recipe may be multiplied and frozen, but I would not put the cooked rice in the mixture if frozen.
