2 tbsp olive oil
2 cloves garlic, chopped (can use garlic powder)
1 small zucchini (can use any squash)
1 c shredded carrots
3 c chicken broth
12 bag of any pasta (I use rotini or penne)
1/2 c grated Parmigiano Reggiano cheese or any cheese
salt and pepper to taste

Directions:
Directions:
Heat a medium skillet over medium high heat. Add oil to pan. Add garlic, zucchini, and carrots, then saute 5 minutes. Add chicken broth and bring to a boil. Add pasta and bring to boil. cover and reduce heat to medium. cook stirring occasionally until pasta absorbs the liquid and is al dente, 10 minutes. Uncover and stir in cheese. Season with salt and pepper.
