1 1/2 c wheat bran
1 c buttermilk
1/3 c oil
1 egg
2/3 c brown sugar
1/2 tsp vanilla
1 c all purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 c raisins-optional

Directions:
Directions:
Preheat oven to 375. Grease muffin cups or line with paper muffin liners.
Mix together wheat bran & buttermilk. let stand for 10 minutes. Beat together oil, egg, sugar & vanilla, add to buttermilk mixture. Stir in dry ingredients just until blended. Fold in raisins. Spoon batter into prepared muffin tins. Bake for 15-20 minutes. Cool & enjoy!
