-------------------------Dry Ingredients--------------------------
1 cup flour---
1tsp sugar---
1 tsp baking powder---
1/4 tsp baking soda---
1/4tsp salt---
-----------------------Wet Ingredients----------------------------
1 egg---
1c butter milk (or 1 cup milk less 1or 2 tbsp and add in vinegar 1 or 2tbsp & let set 15 minutes)---
2tbsp cooking oil---
Shortening (to grease skillet)

Mix the Dry ingredients. Mix the wet ingredients. Add dry ingredients to wet ingredients until well mixed but do not over mix or the pancakes will be tough.
Grease skillet over medium heat.
Add 1/4 c batter per pancake
About 1 to 2 minutes per side

I'm not sure about the number of servings but I know this is a fairly small batch, feeds about 4 with maybe a few left over. If having company, at least double the recipe depending on number to be eating. Really really yummy pancake recipe!

You can add blueberries, fresh or frozen. I have frozen on hand and how I add them is once I have dropped my 1/4c batter on the skillet I just sprinkle however much blueberries I want per pancake right on top. When they are finished cooking the blueberrys are warm & yummy

I also add a capful of vanilla & about a tsp or so of cinnamon.
