4 eggs, beaten
1 c ham, cubed
1/2 c milk
2-1/2 c potatoes, peeled and shredded
1 c frozen mixed vegetables, thawed
1 c cheddar cheese, shredded
1/4 tsp dried onions
1/2 c cheddar cheese, shredded

Directions:
Directions:
For filling: Combine eggs, vegetables, ham, 1 cup cheese, milk, and onion. Set aside. For crust: After peeling and shredding potatoes, place into a strainer and wash under cold water until water is clear (you must get all the starch out or the potatoes will turn brown). Combine potatoes with cup cheese and press into bottom and up sides of a 9" pie plate. Pour filling into crust and bake immediately at 350̊ for 50-60 minutes.
