1 1/2 C. flour
1/3 C. sugar
1/4 C. firmly packed brown sugar
3/4 Tsp. baking powder
1/2 tsp. baking soda
1 lb. (16 oz.) mango; peeled, diced, divided
1 egg; lightly beaten
1 Tbsp. water
1/2 C. chopped dates
1/4 C. flaked coconut
1/4 tsp. salt
1/4 tsp. cinnamon
1/8 tsp. ground allspice
1/8 tsp. ground ginger
1/3 C. butter or margarine; melted and cooled
1 tsp. vanilla
1/2 C. chopped,lightly salted macadamia nuts

Grease and flour an 8x4" baking loaf pan.Set aside. In a large bowl stir together flour,sugars, baking powder and soda, salt, cinnamon, allspice and ginger. Measure 1/2 C. mango,set aside. In blender, puree remaining mango(about 1/3 C.). In medium bowl, mix pureed mango with butter, egg, water, vanilla. Add mango mixture to dry ingredients and stir until combined. Stir in remaining pieces of mango. Pour into prepared pan. Bake 1 hr.10min. Cool for 10-15 minutes. Remove from pan. Cool 3 hours before serving.
