Banana Crunch Muffins


Ingredients:

Muffins:
1 Egg
2 C Bisquick
1 C Mashed bananas (About 2 medium)
1/3 C Sugar
3 T Vegetable oil


Crunch Filling:
1/3 C Chopped walnuts or pecans
3 T Brown sugar

Mix until crumbly

Preparation:

1. Preheat oven to 400F.
2. Grease bottoms only of 12 medium muffin cups, or line with paper baking cups.
3. Beat egg slightly; stir in remaining ingredients except crunch filling, just until moistened.
4. Fill each muffin cup about full; Sprinkle with crunch filling; drop remaining batter over filling.
5. Bake until golden brown, about 15 minutes.

Yields about 12 muffins
