Vanilla Pudding


1/3 C Sugar
1 T Cornstarch
1/8 t Salt
2 C Milk
2 Egg yolks, slightly beaten
1 T Butter or margarine
1 t Vanilla


1. In medium saucepan, combine first 3 ingredients. Gradually add milk.
2. Cook over medium heat until mixture boils and thickens stirring constantly. Boil 1 minute.
3. In small bowl, blend about 1/3 of hot mixture into egg yolks. Return to saucepan; blend well.
4. Cook until mixture bubbles, stirring constantly.
5. Remove from heat; add butter and vanilla. Cool slightly; spoon into serving dishes. 4 servings.

Tips: For chocolate pudding, increase sugar to C and cornstarch to 3 T. Add 1 oz. (1 square) unsweetened chocolate with milk. After cooking pudding, beat with rotary beater until smooth. Omit margarine.
