4 c. strawberries, washed and hulled
3 c. water
1/2 c. sugar
1 c. orange juice
1 T. cornstarch
1 c. sour cream

Directions:

Serves: 4
Preparation Time: 30 minutes, Chill 4 hours


Combine strawberries, water and sugar in saucepan. Bring to a boil, reduce heat and simmer 5 minutes. Stir in orange juice. Mix cornstarch with 2 T. water, add to berries and simmer, stirring 10 minutes or until soup is slightly thickened. Refrigerate. Mix chilled soup in blender at high speed until smooth. Stir in sour cream. Chill 4 hrs. or overnight. Garnish with sliced strawberries.
