2 tsp. finely grated fresh ginger
1 garlic clove, pressed
1/3 cup rice or white vinegar
1/4 cup orange juice
1/4 cup vegetable oil
1 tsp. sesame oil
1 envelope Lipton Onion Soup Mix
2 tsp. sugar

8 oz. cooked bow tie pasta
1/2 cucumber, seeded and sliced
1/2 cup diced red pepper
1/2 cup diced red onion
1 package fresh baby spinach
1 11-oz. can mandarin oranges, drained
2 cups diced cooked chicken
1/2 cup sliced almonds, toasted

1) Mix together all the dressing ingredients, cover and refrigerate until ready to use.
2) Mix together all of the salad ingredients.
3) Pour the dressing over the salad, toss, and serve immediately.

There are a lot of ingredients, but this salad is simple to put together and worth the time!
