1 lb fresh spinach 1/2 to 1 lb any type of white fish 1 small lemon, thinly sliced salt & pepper
Thoroughly wash spinach; leave wet Place spinach in medium frying pan that has a tight fitting lid Place fish on top Add thinly sliced lemon, salt & pepper Cover & cook over low heat approx 10 minutes until fish easily flakes with fork
Thinly sliced white onion can be added between the fish and lemon for a slightly different flavor
