4 c fresh spinach
1 c fresh mushrooms or peas
1 c shredded carrot
2 hard boiled eggs
6 slices bacon, crisp, cooked, drained and crumbled
3/4 c cheddar cheese grated
2 green onions
3/4 c mayo
1/2 tsp lemon juice
1/2 tsp dill weed

Directions:
Directions:
Place lettuce at bottom of clear salad bowl. Sprinkle with salt and pepper. Layer mushrooms, carrots. Arrange egg slices and bacon over veggies. Top with 1/2 cup grated cheese and green onions. Combine mayo, lemon, and dill weed. Spread dressing on top and then sprinkle with remaining cheese and onions. Cover and chill for 2-24 hours. Before serving toss salad with dressing.
