1/4 pine nuts
3 cloves garlic
4 cups loosely packed basil leaves (about 2 ozs)
1/4 cup extra-virgin olive oil
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
1/8 tsp crushed red pepper
1/2 cup (2 ozs) grated fresh Parmigiano-Reggiano cheese
2 cups chopped seeded tomatoes drained (about 2 large)
1/2 chopped sun dried tomatoes (optional)

Directions:
Directions:
Heat small skillet over medium heat. Add pine nuts to pan, cook 4 minutes or until lightly toasted,stirring constantly. Remove from pan.

Combine nuts and garlic in a food processor; process until minced. Add basil, oil,salt & peppers; (and optional sundried tomatoes) process until smooth. Spoon into a bowl; fold in tomatoes.

Yield: 20 servings of two Tbsp
