3-10 oz. packages of frozen corn or preferrably fresh corn cooked and cut off the cob
3/4 c. red pepper chopped
1/2 c. fresh cilantro chopped
1/4 c. green onions chopped
4 oz. package of feta cheese (add a lot or a little or none at all) (I prefer a lot).

Dressing:
1/3 cup vegetable oil
1/3 cup white wine vinegar
2 Tbsp Dijon mustard
1/2 tsp. black pepper
1 Tbsp jalapeno pepper (optional)

Directions:
Directions:
Combine corn, red pepper, green onions, cilantro, and feta cheese together in bowl.
Prepare dressing by combining all ingredients. Whisk together until blended.
Pour dressing over and stir to combine. Chill before serving. Makes about 5 cups.
