1 c orange juice
1 tbsp reduced-sodium soy sauce
1 tsp dark sesame oil
1 tsp minced garlic
1 to 1-1/2 pounds boneless, skinless chicken
1 tbsp cornstarch
3/4 c chicken broth
1 tbsp minced fresh parsley or cilantro (optional)
1 tbsp toasted sesame seeds (optional)
2 c. cooked rice

Directions:

In a shallow nonmetal dish, combine the orange juice, soy sauce, oil, and garlic. Add the chicken. Turn to coat. Cover and refrigerate for at least 1 hour, turning frequently. Heat a 10" skillet over medium-high heat until hot. Coat pan with nonstick spray. Add chicken in a single layer; reserve marinade. Cook the chicken for 2 minutes, turn and cook 2 minutes more or until golden brown. Place chicken on plate; cover to keep warm.
Place cornstarch in a medium bowl. Add the stock and stir until smooth. Add the reserved marinade and mix well. Reduce heat to medium. Pour mixture into skillet and cook 3 minutes or until sauce begins to thicken. Add chicken and cook for 5 minutes more, until chicken is no longer pink. Serve chicken over rice. Sprinkle parsley/cilantro and toasted sesame seeds over top if desired.

For freezer meal, combine orange juice, oil, soy sauce, garlic, stock, and cornstarch into a ziplock freezer bag. Shake to mix well. Add chicken. Seal and freeze. To serve, thaw in refrigerator and cook as above.
