Ingredients:  
1/2 lb. fresh mozzarella cheese
3 tomatoes, sliced
1/2 tsp. salt
1/4 tsp. pepper
3-4 tbsp. olive oil
1/2 cup chopped fresh basil

Directions:
Directions:
If cheese is in brine, remove and drain and cut into thin slices. Sprinkle tomato slices with salt and pepper. Alternate tomato and cheese slices on serving platter and drizzle with olive oil.
Cover and chill for at least 4 hours. Just before serving, sprinkle with chopped basil.
