8 lasagna noodles
1 small container ricotta cheese
1 C. mozzarella cheese
1 small pkg. frozen spinach (chopped)
2 eggs; slightly beaten
1/2 C. finely chopped onion
1 jar of Prego Heart Smart (or of your choice) spaghetti sauce
(opt.- using ground beef for your sauce is up to you)

Boil lasagna noodles (aldente). Set aside, soaking in cold water to stop cooking process.
In mixing bowl add the following: ricotta cheese, mozzarella cheese, parmesean cheese, frozen spinach (thawed out by soaking in cold water & drain), chopped onion, pepper & eggs. Mix well; cover and set aside.
In a 13x9x2" baking dish or pan, spread a little of the spaghetti sauce, enough to cover the bottom. Then carefully take lasagna noodle & carefully spread about 1/3 C. of cheese & spinach mixture on noodle and carefully roll up (not too tight) and place seam side down in pan. Continue process with remaining noodles.
When finished, cover with remaining sauce & sprinkle with mozzarella cheese. Cover with foil and bake at 350 for 45 minutes to 1 hour.
