2 deep dish pie crusts, thawed out
2 large sweet potatoes(boiled, peel & mash) 2+ cups
2 1/2 cups sugar
2 sticks of butter (room temperature)
4 well beaten eggs
1 large can of evaporated milk
2 tbsp. flour
2 tsp. lemon extract

Directions:
Directions:
Mix flour and sugar together, then mix in everything else in.
After all is blended, strain mixture through a regular colander (not a mesh strainer). Pour the strained mix into 2 uncooked pie shells. Bake at 350 (preheated oven) for
30 to 35 minutes. Cook until the middle of pies jiggle in the center.

This pie has NO STRINGS. It will also do fine if frozen for several weeks. Simply take it out of freezer and thaw before you are ready to serve.
