7 to 8 C flour
2/3 C butter
C sugar
C water
1 pkg. yeast
1 C mashed potatoes
1 tsp. salt
2 eggs
2 C milk

Directions:
Directions:
Cook large potato and mash well. In large mixing bowl, combine 2 C flour, sugar, yeast and salt. In a saucepan, heat milk, shortening and water to 120 degrees. Add to dry ingredients and beat until moistened. Add mashed potatoes and eggs. Beat until smooth. Stir in enough flour to make fairly stiff dough. Place dough in a large container and refrigerate for several hours or overnight. Turn dough onto a lightly floured surface and punch down. Divide in half and with greased hands, shape into rolls. Place 2 inches apart on greased baking sheet. Let rise until double. Bake at 375 degrees for 25 to 30 minutes. Remove from pans to wire racks.
