6 to 8 apples cut into chunks (peeled and cored)
2 tsp cinnamon
5 TBS sugar

3 cups flour
2 cups sugar
1 cup cooking oil
4 eggs
1/4 cup orange Juice
3 tsp baking powder
2 1/2 tsp. lemon extract
1 tsp salt

Directions:
Directions:
pare and core apples and add cinnamon sugar mixture and set aside.
Combine all other ingredients in order and beat until it makes a smooth batter. Pour half the batter into a greased angel cake pan or a Bundt pan. Arrange half the apple mixture over top of batter then pout the remaining batter in and top with the rest of the apples. Place in a 350 degree pre-heated oven for 1 1/2 hours or until golden brown. Turn out of pan carefully let stand on rack to cool

If you don't like Lemon extract you can use Vanilla extract. The Lemon extract was a change form the original recipe.
