Cream together:
3/4 C. shortening
1 C. sugar
Beat in:
1 egg
1/2 tsp. lemon extract
1 C. mashed carrots; (cooked)
1/4 tsp. vanilla extract
Sift together:
1/2 tsp. salt
2 C. flour
1 tsp. baking powder

Directions:
Directions:
Drop on lightly greased cookie sheet & bake at 350 for about 9 minutes.
