5 lbs potatoes
16 oz. jar of mayo
1 small pkg Velveeta cheese
1/2 lb. bacon
1 onion chopped
2 tbsp. minced garlic or garlic salt

Directions:
Directions:
Boil potatoes with skins on. Cool, then dice with skins on. Mix with mayo and garlic. Put in baking dish, top with cheese, cooked bacon and onion. Cover with foil. Bake at 350 for 40 minutes.

Editor's note: I haven't tried it, but assume you can substitute a good cheddar (grated) for the Velveeta.
