8 medium potatoes
Salt to taste
1 egg
Flour enough to make a dough that is not sticky - at least 5 cups

Directions:
Directions:
Boil with skins on until soft. Peel, mash or blend to eliminate all lumps. Add salt to taste and egg. Add enough flour to make a dough that is not sticky. Take pieces of dough and roll into long 1/2 around size and cut into 1 inch pieces. With index and middle finger, pull dough toward you to make an indentation. Put pieces on a floured towel. Do not allow to touch each other. Cover with another towel until ready to cook. Allow them to rest and dry slightly before you cook.

Boil in a large pot of water with salt and a little oil to keep from sticking. Cook about 30 minutes or until center is done. Drain. Cover with favorite sauce.
