1 tbsp minced garlic
2 tsp minced ginger root
1/3 cup chopped green onion
1 cup thai, jasmine, basmati or other long grain white rice
1 cup each light coconut milk and water
1/4 tsp salt
2 tbsp chopped fresh cilantro

Directions:
Directions:
1. In saucepan, combine 1 tbsp water, garlic, ginger and half of the onion, cook over medium heat, stirring for 2 minutes.
2. Stir in rice, coconut milk and water, bring to boil. Reduce heat to low; cover and simmer for 20 minutes. Remove from heat and let stand 5 minutes.
3. Sprinkle with salt; fluff with fork. Garnish with remaining onion and cilantro.
