3 strips of bacon
1/4 cup of vinegar
2 teaspoons of sugar
1/4 teaspoon salt
1/8 teaspoon of pepper
1/8 teaspoon of terragon
1 small red onion, thinly sliced
1 package of spinach leaves torn--8 cups total
1/2 cup of celery
2 medium oranges peeled and sliced
1/3 cup cashews coursely broken

Snip bacon into 1 inch pieces and place in a 3 quart casserole. Cover with paper towel. Microwave at high 1-3 minutes until crisp. With slotted spoon, place bacon on paper towels to drain. To bacon drippings, add vinegar, sugar, salt, pepper, and terragon. Microwave on high 1-3 minutes or until mixture boils. Stir in celery and onion.Gradually add spinach to hot dressing, tossing to coat entirely. Add crumbled bacon, oranges and cashews. Toss again slightly. Serve immediately
