3 eggs
2 c. sugar
1 c. oil
3 c. flour
1 tsp. salt
tsp. baking soda
3 tsp. vanilla
2 c. unpeeled shredded zucchini
tsp. baking powder
3 tsp. cinnamon
Nuts, raisins, or chocolate chips if desired

Directions:

Mix eggs, sugar, and oil. Then add remaining ingredients. Bake at 325 for 1 hour or until done. If desired, may add tsp. cloves.
