1 cup chopped pecans
1 cup firmly packed brown sugar
1/2 cup all-purpose flour
2 large eggs
1/2 cup melted butter or margarine

Directions:
Directions:
Combine first 3 ingredients in large bowl. Make a well in the center of the mixture. Set aside.

Beat eggs until foamy. Stir together eggs and butter. Add to dry ingredients, stirring just until moistened.
Place FOIL baking cups (tends to stick if paper liners are used) in muffin pans and coat lightly with cooking spray.

Fill 2/3's full. Optional: place 1/2 pecan on the top of each.
Bake at 350 degrees for 20-25 min.

Remove from pan immediately and cool.

YIELD: 10 Muffins

This is a recipe from a friend in Kentucky who is a great Southern cook, and definitely knows her pecan pies! Much simpler to prepare than a pie, but provides the same yummy taste of a "down home Southern Peeeeeee....can Pie! It has been a "winner" each time I have served it! Suitable as a dessert or a breakfast bread.
